If I defrosted a pork loin on friday eve is it still good on monday?

It should be, as long as you defrosted it under refrigeration. Pork has a distinct smell and feel to it if it's no longer good. If it has a bad odor, or feels slimy, do not use it. What you spent on it is not worth getting sick.
