Ideas for dinner please?!?
Cut the potatoes into quarters and put them in a zip lock bag with some olive oil !/4 to 1/2 C., 2 tsp. of chopped garlic and an envelope of dried onion soup mix if you happen to have some (otherwise, you can add a chopped onion and some spices (paprika, salt and pepper). Bake at 375 degrees for about 30 minutes or until the potatoes are tender. (You don't have to peel the potatoes). Saute some diced red pepper, mushrooms and onions in a pan until they are tender and add carrots, peas and corn to that if you wish. It will be a vegetarian delight. Serve it with some toasted bread or if you want, you can make a grilled cheese sandwich. If it were me, I would go with the potatoes and the sauted vegetables and that would make me happy.
